WINES of PORTUGAL Wine Tasting

reporter: Miguel Dominguez

Master Sommelier Fred Dexheimer

On March 5, 2013, I had the privilege of tasting wines presented by more than 35 producers from Portugal who are seeking importers and/or distributors in the U.S.

The event was arranged by Full Circle Wine Solutions, a wine and spirits education firm that grows brand loyalty and client profits through tailored wine programs and effective hospitality training. Their invitation provided a great opportunity to learn more about the exciting wines coming from this unique Iberian nation. The list of participating producers is included below.

With the commercial success of Evan Goldstein's critically acclaimed book, Perfect Pairings: A Master Sommelier's Practical Advice for Partnering Wine with Food (University of California Press), Full Circle Wine Solutions also offers Perfect Pairings Education Seminars that showcase key tasting and pairing techniques discussed in the book.

Master Sommelier Fred hosted an overview presentation at Fig & Olive Restaurant, which offered as palate cleansers an extraordinary Mediterranean Menu consisting of Cheese and Charcuterie accompanied by apricots, olives, figs, spreads, almonds and an array of utterly delicious, assorted Crostini, featuring Goat Cheese with Caramelized Onion; Chive, Manchego, Fig and Marcona Almond; Prosciutto, Ricotta, Fig, Olive and Walnut; Copa, Goat Cheese, Fig, Honey and Almond; Salmon, Ricotta, Citrus and Cilantro, and Shrimp, Avocado, Cilantroand Tomato.

Adding to the feast were passed appetizers Mini tomato tart with herbs de provence & Niçoise olive; Zucchini carpaccio, parmesan and pine nuts; Beef carpaccio, parmesan, White Truffle Oil; Branzino crudo, cherry tomato & dill; Salmon crudo, orange, grapefruit, dill, lemon scallion; Crab Cakes; Chicken croquette with pine nut and Mushroom croquette, parmesan with White Truffle Olive Oil.
